    The lampascioni in oil are a true Apulian must-try speciality. Lampascioni are bulbs that are very well known in Apulia and more commonly in Southern Italy where are called “onions from snakes” by farmers. These small wild onions are found 5 – 10 cm below ground and are known for their slightly bitter taste. To restore the authentic taste of this particular Apulian peculiarity, the Depalo family selects the best raw materials to which the Depalo extra virgin olive oil is added for preservation in order to restore all the genuine taste of typical recipes.

    The unique and unmistakable taste of lampascioni in oil make them particularly suitable as an appetizer, to make omelettes, to accompany roast meats, cold cuts and cheeses, to flavour bread slices or croutons. To be prepared as preserves, lampascioni are scalded in water and put in extra virgin olive oil with garlic, parsley, red pepper and capers.
