  • THE HARVESTING

    The harvesting of the olives is the most important moment of the year for us. It is actually the final phase of a constant work on the plant that lasts 12 months made of care and attention

    I often went to the countryside; I loved to hear the distant exhale of the sea melt into the wind with the scent of the ground, caressing the plumed leaves of the olive trees, stop time at that moment … I started the journey with 150 olive trees, now my port has 10,000 olive trees.

    The quality of our extra virgin olive starts from the care of the tree, then continues with the olive harvest and milling in the mill. We have chosen to cultivate only varieties of historic varieties of Apulia, such as the Coratina and the Ogliarola Barese, to enhance the heritage of our region.
