The sponsali in oil is a typical preserve of Apulia and is known to be irresistible. The “nuptials” are long onions, typical of the region, ideal for side dishes of meat or savoury cold cuts. The oil spousals are widely used in rural cooking, whose ingredients are all that the earth gives. The “sponsali” give the dishes a very particular aromatic and sweet taste, and it is often used as a side dish in combination with meat but also with legumes and codfish. “Sponsale” is a dialectal term that indicates small bulbs with their green part. The term has become commonplace over the years thanks to the increasingly widespread knowledge of the typical recipes of Apulia, and in particular of the famous “onion calzone”. And it is precisely this dish, which in ancient times was prepared and consumed on the occasion of the “sponsalia”, that is the promise of marriage, which gave its name to these onions.
The “sponsali” are obtained from the planting of bulbs during the summer months and not from seed or seedlings such as classic onions. They are often sold or confused with leeks but they are two completely different things. Like onions, they are known for their nutritional value. The rich presence of mineral salts and various vitamins, especially C, together with the many ferments, help digestion and stimulate the metabolism. At the sight it shows green ribs, internally empty, with white shades on the stem, which end with a small onion bulb.
